Everybody LOVES Brunch!
It’s Friday and the weekend is almost here! It’s not long before you can kick up your feet and enjoy brunch. Who doesn’t love brunch?! Throwing it back to Mother’s Day for my favorite brunch to make for Mom that would be great for any Saturday or Sunday enjoying a mid-morning meal with friends!
Chicken and waffles are my favorite go-to meal for brunch or what I like to call, brinner, that’s a combination of brunch and dinner, feel free to use that! You can put so many different spins on the waffles and who doesn’t love fried chicken. I give major points to the creators of this creative combination.
Chicken and waffles is a very simple dish but I put the Chef Dell spin on this one. For my mom, I’ve prepared a lemon ricotta and black sesame seed waffle with seasoned fried chicken and a black truffle honey maple syrup.
The dish alone will impress your guests, but the table decor is the eye candy that will take your dining experience to the next level! Don’t forget these special details for your next brunch.
Lemon Ricotta Poppyseed Waffles
Ingredients:
•All purpose flour- 2 1/2 cups
•Eggs- 2
•Canola Oil- 1/4 cup
•Sugar- 1/3 cup
•Baking powder – 4 tablespoons
•Buttermilk- 1 1/2- 2 cups (add it gradually until you get the right consistency)
•Ricotta Cheese- 2/3 cup
•Lemon Juice- 1 lemon
•Vanilla Extract- 1 Tbs
•Poppyseeds- 1/2 cup
Fried Chicken
•Chicken (Whole pieces or the breasts) I used breast meat.
•Buttermilk- 1 cup
•Sriracha- Tbs
•All Purpose Flour 2 Cups
•Canola Oil for frying
•Rosemary- 2 Tbs
•Thyme- 2 Tbs
•Onion Powder- 2 Tbs
•Paprika- 1 Tbs
•Garlic Powder- 1 Tbs
•Salt- 1 TBS
•Pepper- 2 Tbs
•Cayenne Pepper- 1/2 Tbs
Black Truffle Honey Maple Syrup
•Butter- 2 Tbs
•Maple Syrup- 1 Cup
•Black Truffle Honey, made by the Truffleist (found online and at Wholefoods)
Place all ingredients in a pot and simmer for 1 minute and set aside.
Procedure
Heat Waffle iron to high and spray with non-stick spray.
Mix waffle ingredients until well blended and set aside.
Heat Canola Oil for frying in a cast iron or deep fryer. The temperature of oil should reach and remain at 350 degrees. Season chicken with salt and pepper and set aside in a bowl with the buttermilk and sriracha. You can do this the day of for about 30 minutes but, it is better if it’s done overnight. Mix flour and seasonings in a bowl and set aside. When ready, remove chicken from buttermilk mixture and add it to the seasoned flour for breading. Dip and coat three times for that lasting coating and extra crispiness on chicken.
When waffle and chicken are done, plate and serve hot and garnish with Fresh mint and Syrup.
Note: This dish can be accompanied by fresh fruit and a drink of choice.
