Celebrate Dad this weekend!
Steak and eggs are a great go to for a Father’s Day brunch meal. Fathers, in my opinion, love to have a good hearty meal. Steak and eggs hits every food group – you get your protein and your starch, while playing on some really good flavors.
Pictured is Dell Steak and Eggs with chimichurri sauce, a fried egg and truffle Parmesan home fried potatoes, served on a wooden plank. The wooden plank makes for a very universal and non-traditional plating option.
Ingredients:
Steak flank steak 1-2 lbs
Eggs 2-3
Potatoes 2-3 sliced
Parmesan cheese 1/4 cup
Black Truffle oil 1 tablespoon
Red chili flakes 1/4 teaspoon
Salt & Pepper
Canola oil
Garlic cloves 2
Rosemary 1 sprig
Thyme 1 sprig
Butter 1 tablespoon
Chimichurri Sauce:
Parsley flat-leaf (bunch)
Extra Virgin Olive Oil 1/2 cup
White wine vinegar 2 Tablespoons
Garlic 4 cloves
Oregano 2 teaspoon
Sea salt 1/2 teaspoon
Crushed red pepper 1/2 teaspoon
Procedure:
Heat oil to 350 degree
Slice potatoes, rinse and pat dry
Add potatoes to oil
Fry until golden brown
Sprinkle salt and pepper on both sides of the steak
Heat cast iron pan
Add olive oil and sear steak on both sides for 5-7 minutes add garlic rosemary and thyme and butter for basting
While steak is cooking, place potatoes oil in to fry. Fry until golden brown. Toss in truffle oil, parsley and parmesan cheese.
Mix ingredients for sauce and set aside.
Let steak cook and baste with butter when done, slice steak and set aside
Fry egg to its desired level and plate on wooden plank or a plate and garnish steak with chimichurri sauce.
